meson: Use the right dependency for gtkdoc
The gdkpixbuf_dep pulls in the right include dir. This fixes the
following error:
gdk-pixbuf-scan.c:7:10: fatal error: gdk-pixbuf/gdk-pixbuf.h: No such file or directory
